The Mighty Lingonberry
We do love the mighty Lingonberry in our foods. In fact, we just can’t get enough of it. So we thought it was time to write a bit about the berry itself.
In Latin, it is known as Vaccinium vitis-idaea (in Latin). It has a high content of benzoic acid in the berry makes it possible to preserve it for longer periods without additional preservatives. It is a nutritious berry with A, C, E, B1, B2 och B3 as well as, Ca, K, Mg and Phosphorous.
We traditionally serve lingonberries with our meatballs as we think the balance of the meat, the acidic and the sweet is absolutely a perfect balance. Now we have also experimented with lingonberry on the chicken and I dare say that we think it is divine.
You can enjoy skewered lingonberry chicken at Fika served with grilled mash until end of May!
